BBQ Steak and Vegetable Salad

Recipe Ingredients

1-1/2 pounds beef flank steak, fat trimmed
2 medium sweet onions, cut into small wedges
6 medium Italian plum tomatoes, cut into wedges
4 ears corn, cooked, cut into 1-1/2 inch pieces
1 medium red bell pepper, sliced
Fresh Herb Vinaigrette (see recipe below)

Yield: Makes 6 servings

Recipe Cooking Instructions

Barbecue steak over medium-hot coals to taste, turning halfway through cooking time. Slice steak, diagonally across grain, into 1/4-inch slices.

Combine sliced meat and vegetables in shallow serving bowl. Pour dressing over and mix. Serve immediately or refrigerate and serve chilled.

Fresh Herb Vinaigrette

Recipe Ingredients

3 tablespoons olive oil or canola oil
1/3 cup red wine vinegar
1/4 cup water
2 tablespoons fresh lemon juice
1 clove minced garlic
2 tsp sugar
3 tablespoons chopped fresh sage or 1 teaspoon dried
3 tablespoons chopped fresh thyme or 1/2 teaspoon dried
1 teaspoon dried oregano
1 teaspoon dried basil
1/4 teaspoon salt 1/4 teaspoon pepper

Yield: Makes about 3/4 cup

Recipe Cooking Instructions

Combine all ingredients in covered jar; shake to mix.

Serving : 1/6 recipe (3 oz. meat) with 2 tablespoons vinaigrette.

Turkey Burgers w/Fresh Fruit Salsa

Recipe Ingredients

1/3 cup bought sweet-and-sour sauce
1 clove garlic, minced
1 tsp dried mixed herbs
1/4 teaspoon crushed red pepper
2 med nectarines, peeled/pitted/chopped (about 1-1/2 cups)
1 pear, cored and chopped (about 1 cup)
1 pound ground raw turkey
1/2 cup finely chopped onion
2 teaspoons dried basil
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon hot pepper sauce
1 tablespoon finely chopped onion
1 teaspoon lemon juice

Recipe Cooking Instructions

1. For salsa, in a medium bowl combine sweet-and-sour sauce, garlic, mixed herbs, lemon juice, and crushed red pepper. Stir in nectarines, pear, and the 1 tablespoon chopped onion. Cover and chill for up to 6 hours.

2. In another medium bowl combine the turkey, remaining 1/2 cup onion, basil, salt, black pepper, and hot pepper sauce; mix well. Shape into four 3/4-inch-thick patties. Grill meat on the grill rack directly over medium-hot coals for 14 to 18 minutes or until an instant-read thermometer inserted in side of patty registers 165 degrees F, turning once. (Or, grill, covered, indirectly with medium heat for 20 to 25 minutes.)

Serve burgers with salsa. Makes 4 servings.
